A classic heirloom with roots (literally) in Victorian-era gardens, Hollow Crown Parsnip is prized for its long, creamy-white roots and nutty-sweet flavor that intensifies after frost. With strong tops and reliable yields, this variety grows best in deeply prepared beds and is excellent for winter harvests or cellar storage.

Requires loose soil, consistent moisture, and patience to germinate. Once up, it thrives with minimal input. Ideal for fall gardens and long-season growers.

TO START:
Direct sow outdoors ½" deep as soon as soil is workable in early spring. Parsnip seeds take 14–21 days to germinate. Thin to final spacing once true leaves appear.

• Do not transplant—roots dislike disturbance
